our cooking video




The recipe:
* Roll of pizza dough
* 1 big tomato or 2 small tomatoes
* 1 cup of basil leaves
* 1/2 cup of Extra virgin olive oil
* shredded mozzarella cheese as much as wanted
* a clove of garlic
* 4-5 string cheese sticks (optional)
* a pinch salt and pepper (optional)


What to do next:
-flatten out the dough onto pan
-preheat oven or toaster oven to 350 degrees
-spread the oil on dough
-meanwhile make mixture
* sliced tomatoes
* 1/4 cup of extra virgin olive oil
* chopped love of garlic
* a cup of basil leaves
* sprinkled shredded cheese

-put mixture on the flatten dough
-put the mozzarella cheese on the top of it
-bake 15-20 minutes or until crisp brown

Arroz Con Leche Recipie

Ingredients

* 1 cup long-grain white rice (155 g)
* 3 cups water
* 3 inches cinnamon sticks or 1 teaspoon ground cinnamon
* 1 tablespoon very fine julienne strips lime peel (optional)
* 1 pinch salt
* 4 cups milk (or for richer pudding substitute 1 can of evaporated milk and add enough regular milk to equal 4 cup)
* 1 egg
* 1 1/2 cups sugar, to taste (375g)
* 1/3 cup raisins (60 g)
* 1 teaspoon vanilla extract

Directions
# Place the rice in a large saucepan with the water, cinnamon, lime peel and salt.
#2Bring to a boil; lower the heat and cook, covered, until most of the water has been absorbed.
#3Beat an egg into the milk.
#4Stir in the milk, egg mixture and sugar, stirring constantly, over low heat until the mixture thickens.
#5Add the raisins and vanilla and cook for 2 minutes.
#6Remove from the heat and let cool for 10 to 20 minutes.
#7 Transfer to a platter or individual bowls and refrigerate.
#8 Garnish with ground cinnamon if desired.

FLÄDLE
(Pancake-type noodles for soup)

9 level tablespoons flour
2 eggs
1/2 stick melted unsalted butter
salt
pepper
dash nutmeg
5 tablespoons milk

1 tablespoon oil
1 tablespoon butter

In a skillet heat the tablespoon oil and butter.

In a bowl whisk together flour, eggs, melted butter, milk and seasoning. Ladle portions of the batter into the skillet and fry golden-yellow (some brown specks are normal) on both sides. Let the pancakes dry on paper towel. Then roll each pancake up and slice them into 1/8 inch thick strips and heat them in the same broth that you serve the liver dumplings in.


KAISERSCHMARREN
(Emperor's Pancakes)



1 cup Sifted Flour
1/4 cup Sugar
1/4 teaspoon Salt
3 Eggs
1/2 cup Milk
1/2 cup Heavy Cream
2 tablespoons Butter, melted
1/2 cup Butter
1/2 cup Raisins, soaked for 30 minutes in a little rum
1 teaspoon cinnamon
1 cup Sugar

Sift flour, sugar and salt together. Using rotary beater, whip eggs until light and frothy; beat in milk and cream and melted butter. Turn flour mixture into beaten egg and still using rotary beater, whip until you have smooth batter. Grease a 6" or 8" skillet with a little butter and when moderately hot, pour in just enough batter to cover bottom of skillet with a paper thin layer. To do this, pour batter, then quickly tilt and rotate pan so batter runs over it evenly. Cook over moderate heat until pancake is golden brown on underside; turn and brown second side. Remove to a heated platter. Continue frying pancakes this way until batter has been used. With two forks, tear pancakes into small pieces, approximately 1" to 1 1/2" squares or rectangles will do. Melt 1/2 cup butter in a 10" skillet and add soaked, well drained raisins and cinnamon. Put cut pancakes into this sauce and sprinkle with 1 cup sugar. Toss lightly over low heat so that it becomes evenly distributed. Do this quickly, as sugar should not melt but retain some of its grainy texture. Serve immediately. Makes 16-20 pancakes.

Jackie: CHICKEN SALAD/ TUNA SALAD


INGREDIENTS

*Mayonnaise (enough as needed for the salad/creaminess)
*1 tuna/chicken can
*1 celery chopped
*ground pepper (as much as you may want)
*1 Tomato cut in tiny squares

then mix it all into a bowl, and enjoy it with chips, tostadas, or in a sandwich.
